Ingredients

  • 2 large eggs
  • ¼ lb ground beef (80/20 preferred)
  • ¼ cup shredded cheddar cheese
  • 1 tsp butter or oil
  • 1 tbsp sugar-free ketchup
  • Salt and pepper to taste
  • Optional: 1 slice cooked bacon
  • Optional: 1 tbsp chopped pickles
  • Optional: 1 tbsp diced onion (sautéed)

Instructions

  1. Heat a small skillet over medium heat and add butter.
  2. Add ground beef and cook until browned, about 5 minutes. Season to taste.
  3. In a bowl, whisk the eggs until fluffy.
  4. Remove beef from pan and set aside.
  5. Pour eggs into the pan, swirl to cover bottom, and cook until just set.
  6. Add cooked beef and cheese to one side of the omelet.
  7. Drizzle with sugar-free ketchup and any optional toppings.

Notes
