- 2 large eggs
- ¼ lb ground beef (80/20 preferred)
- ¼ cup shredded cheddar cheese
- 1 tsp butter or oil
- 1 tbsp sugar-free ketchup
- Salt and pepper to taste
- Optional: 1 slice cooked bacon
- Optional: 1 tbsp chopped pickles
- Optional: 1 tbsp diced onion (sautéed)
Instructions
- Heat a small skillet over medium heat and add butter.
- Add ground beef and cook until browned, about 5 minutes. Season to taste.
- In a bowl, whisk the eggs until fluffy.
- Remove beef from pan and set aside.
- Pour eggs into the pan, swirl to cover bottom, and cook until just set.
- Add cooked beef and cheese to one side of the omelet.
- Drizzle with sugar-free ketchup and any optional toppings.
- Fold the omelet over, cook 1–2 more minutes, then serve hot.
Notes
Swap cheddar with pepper jack for a spicier twist. Don’t skip the ketchup—it gives that true cheeseburger flavor. For meal prep, brown the beef in advance and keep it ready to go.
