- 1/2 cup cottage cheese
- 2 large eggs
- 1/4 cup oat flour or almond flour
- 1/2 tsp baking powder
- 1/2 tsp vanilla extract (optional)
- Butter or oil for cooking
Instructions
- Add cottage cheese, eggs, flour, baking powder, and vanilla (if using) to a blender or bowl.
- Blend or whisk until the mixture is smooth.
- Heat a non-stick skillet over medium heat and grease lightly with butter or oil.
- Pour the batter to form small pancakes. Cook for 2–3 minutes per side until golden brown.
- Serve warm with berries, Greek yogurt, or sugar-free syrup.
Notes
For a sweeter version, add a pinch of cinnamon or a touch of honey (if not strictly low-carb). These pancakes store well and can be reheated the next day.
