- 1 cup low-fat cottage cheese (drain if watery)
- 2 large eggs
- 2 tbsp psyllium husk or 1 tbsp ground flaxseed
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp Italian seasoning
- Pinch of salt and pepper
- Optional: 1 tbsp grated parmesan
Instructions
- Preheat oven to 375°F (190°C).
- Line a baking sheet with parchment paper.
- Drain cottage cheese using cheesecloth.
- In a bowl, combine cottage cheese, eggs, psyllium husk or flax, and seasonings.
- Let sit for 5–7 minutes to thicken.
- Spread batter into a 1/4-inch thick shape on parchment.
- Bake 18–22 minutes until edges are golden and crust is firm.
- Add sauce and toppings, then bake for another 5–7 minutes.
- Let cool slightly, slice, and enjoy!
Notes
Use small curd cottage cheese and strain well for best crispiness. Try air frying for 10–12 minutes at 350°F, flipping halfway, then top and cook 3–5 minutes more.
