1 box (0.3 oz) sugar-free orange gelatin
- ¾ cup boiling water
- ½ cup cold water
- ½ cup full-fat plain Greek yogurt
- 1 cup heavy whipping cream
- 1 tbsp powdered erythritol or monk fruit sweetener (adjust to taste)
- ½ tsp pure orange extract (optional for stronger flavor)
- 1 tsp orange zest (optional)
- Pinch of salt
Instructions
- In a large mixing bowl, combine the orange gelatin with boiling water. Stir until completely dissolved, about 2 minutes.
- Stir in the cold water and let it cool for 5 minutes at room temperature.
- In a separate bowl, beat the heavy cream with sweetener and a pinch of salt until stiff peaks form.
- In another bowl, whisk the Greek yogurt with orange extract and zest.
- Slowly fold the yogurt into the slightly cooled gelatin mixture.
- Gently fold in the whipped cream until well combined.
- Spoon the mixture into a serving dish or individual cups.
- Cover and refrigerate for at least 2 hours, or until set.
Notes
Use full-fat, unsweetened Greek yogurt to keep the recipe keto-friendly. For faster setting, chill the gelatin in the freezer for 15–20 minutes before mixing.
